For christmas I got myself a new smoker, and so far it's been great. pork chops, and pulled pork are super awesome and the ribs are amazing. I've figured out the pork side of things, but now I'm eager to expand and experiment. This weekend's project is my first ever brisket. I love texas style brisket, and I want to give it a go. Any advice for my first time around?

i didn't know there was any style brisket other than Texas!

i have a few relatives and friends that are well know for their abilities in smoking and cooking meats, i will gather up some tips for you and get them to you may be a week or two though.

I did it up this past saturday, 7.5 hours cook time and it was fantastic. This was only 1/2 of a whole brisket, but with the results I got, I'll definitely be doing it big again. My daughter even said it was bettter than any she'd had in a restaurant - that's high praise coming from her.
